Vegan MoFo – September Tagine

Looking at the list of veggies of this season…
We saw it had the perfect veggies to make a moroccan tagine with couscous! We used zucchini, eggplant, carrots, paprika and tomatoes and spiced it with Ras El Hanout . Just perfect!
Some might not be a fan of raisins… But it adds the perfect sweet touch to the couscous and is a winning combination with the veggies that are quite spicy. We don’t have a recipe online yet, but will have to post it soon!!
When you don’t have a tagine, you can easily stew the vegetables in a regular casserole.
