Very Fishy Burger

Ingredients

  • Burger and its marinade:
  • 2 tbsp soy sauce
  • 2 tbsp mirin (sweet rice wine)
  • 3 tbsp nori seaweed, dried
  • Black pepper to your taste
  • 250 grs tofu, drained
  • Fresh dill
  • Veganaise:
  • 1 tbsp apple cidre vinegar
  • 3 tbsp aquafaba (chickpea brine)
  • 1/2 tbsp mustard
  • ¾ cup sunflower oil
  • Pepper and salt
  • Fresh dill
  • Toppings:
  • 2 burger buns
  • Thaï crackers
  • 150 grs fresh spinach
  • Fresh glasswort

Method

  1. Crush the tofu, add all ingredients and let marinate for at least 8 hours.
  2. Fry the tofu in a little oil, and spice up with the dill.
  3. Mix the aquafaba, the mustard and the apple cider vinegar with a hand blender until white and foamy. Keep on mixing and slowly add the oil. Spice with dill, pepper and salt.
  4. Blanch the spinach briefly in boiling water.
  5. Cut the burger buns in two halves. Cover the bottom half bun with the spinach. Add the fried tofu. Sprinkle with the crushed crackers and the glasswort. Spread the veganaise over the upper half bun and put it on top of the burger.
